Crispy Flathead Fillets with Tartar Sauce
Lightly battered and fried to perfection, these crispy flathead fillets pair beautifully with homemade tartar sauce for a satisfying meal.
Ingredients:
- 500g flathead fillets
- 1/2 cup flour
- 1/2 cup cornflour
- 1 tsp baking powder
- Salt and pepper to taste
- 1/2 cup cold soda water
- Oil for frying
Tartar Sauce:
- 1/2 cup mayonnaise
- 1 tbsp capers, chopped
- 1 tbsp pickles, chopped
- 1 tsp lemon juice
- Salt and pepper to taste

Method:
- Prepare the Batter: In a bowl, whisk together flour, cornflour, baking powder, salt, and pepper. Slowly add soda water until you achieve a smooth batter.
- Fry the Fillets: Heat oil in a deep skillet or pan to medium-high. Dip each flathead fillet in the batter, shake off excess, and fry for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
- Make the Tartar Sauce: In a small bowl, mix mayonnaise, capers, pickles, lemon juice, salt, and pepper until combined.
